Johnny Cakes are a traditional American food, something that few recipes can claim.
Corn meal has always been plentiful in North America, and while it most likely originated in Mexico, sweet corn is 100% American.
Johnny Cakes were widely found amongst the pioneers and even on the Oregon Trail. The recipes can range depending on what ingredients were available and can start with simple cornmeal and water.
While this recipe includes a little bit more, it is not one that would not have been found 200 years ago.
These sweet, cornbread like pancakes are a tradition that should not be forgotten.
2 Cups Buttermilk (Make your own link)
2 TBSP Molasses (optional)
2 cups Cornmeal
1 tsp Salt
2 TBSP Butter (Make your own link)
- Mix eggs, buttermilk and molasses.
- Add cornmeal, flour, salt. Mix.
- Melt butter into skillet
- Scoop batter into skillet and cook until done in center, flipping as needed, like you would a pancake.
